If we are doing a line up of ultimate comfort foods, what is in your top five? For me, it’s chocolate chip cookies, a juicy cheeseburger, macaroni and cheese, pizza, and grilled cheese. There is not a time that those don’t sound like the best things ever. And blessedly I found a way to combine two of them with this pepperoni pizza grilled cheese.

And this isn’t just a run of the mill grilled cheese recipe, this one takes a couple of extra steps that make this grilled cheese one to write home about – starting with a garlic herb compound butter and crispy parmesan on the outside of the bread! Oh yeah, I am not messing around!

What type of cheese works best in grilled cheese?

Cheese. I mean, that’s the wonderful thing, almost any is great! For this pepperoni pizza grilled cheese I used a combination of colby jack and mozzarella. Both melt beautifully, and with mozzarella it has that amazing Instagram worthy cheese pull action that makes you just want to sink your teeth into it.

Some of my other favorite combinations are havarti and white cheddar, and cheddar and pepperjack.

What type of bread is best for grilled cheese?

For this recipe I used a fresh sourdough sliced thin. Because this pepperoni pizza grilled cheese is substantial, use a hearty and thick bread for it. General sandwich bread won’t hold up as well.

If you are going the classic and ever class American cheese grilled cheese, then by all means, use a white sandwich bread – that is the way. But for this, up your game!

What is Compound Butter?

Compound butter is softened butter that has various herbs, salt, and flavor added in. It can be stored in the fridge for various uses. Ingredients to make Pepperoni Pizza Grilled Cheese

  • Sourdough Bread – sliced thin
  • Shredded Mozzarella Cheese
  • Sliced Colby Jack Cheese
  • Pizza Sauce – traditional pasta sauce is too thin for this. Definitely use pizza sauce
  • Sliced Pepperoni
  • Butter
  • Fresh Garlic – 1 or 2 cloves minced.
  • Dried Italian Herbs – to add to compound butter
  • Parmesan Cheese – Finely grated is best to put into compound butter

Ingredients

Pepperoni Pizza Grilled Cheese

  • 8 Slices Sliced Sourdough Bread
  • 2 cups Shredded Mozzarella
  • 2 cups shredded Colby Jack Cheese
  • 1 1/2 cups jarred Pizza Sauce
  • 40 slices Pepperoni

Compound Butter

  • 1/2 cup Butter, melted
  • 2 cloves Garlic, finely minced
  • 1 Tbsp Italian Herbs
  • 1/3 cup finely shredded Parmesan Cheese
  • Salt and Pepper

Instructions

In a microwave safe dish, melt the butter. You can use salted or unsalted butter for this. Add in minced garlic, Italian herbs, shredded parmesan cheese, and any salt and pepper to taste. Stir and set aside.

To assemble pepperoni pizza grilled cheese, lay out all slices of bread. Evenly slather pizza sauce onto one side of each slice. Top sandwiches evenly with shredded mozzarella, sliced pepperoni, shredded colby jack cheese. Top with other slice of bread.

When sandwiches are assembled, brush tops generously with melted compound butter.

Place the sandwiches, buttered side down, into a preheat skillet over medium low heat. Cook until deep golden brown. Just before flipping, brush the uncoated side with the remaining compound butter. Flip the grilled cheese, and cook until cheese is melted and bread is golden brown.

Remove from the pan, allow the sandwiches to sit for 3-4 minutes before slicing to serve.
