Cold peanut noodles with chicken is one of the best and fastest dinners in the summertime! With instant ramen noodles, shredded chicken and a divine peanut sauce over it all!

It’s been a go-to summer favorite for me for well over a decade, and it’s time it lands itself here on the blog! Done in 30 minutes, with grilled chicken, and an easy to prepare peanut sauce, all over cold instant ramen noodles, it’s a summer time must have! The best way to top these cold peanut noodles is with sliced cucumber, sesame seeds, cilantro and a spritz of lime juice.

If you’re in the mood to kick it up a notch, by all means add on some hot sauce.

None of the ingredients here are overly complicated, and you probably have the majority of them in your kitchen right now! Instant Ramen noodles are fast to make and are delicious eaten cold. Smooth peanut butter is the base for the peanut sauce on these cold peanut noodles. Add to it some white wine, lime juice, cilantro, bit of garlic and you’re nearly there! See? I told you, nothing crazy!

If you want to save time making these peanut noodles, use leftover grilled chicken. Shred it and use it cold on these Thai inspired peanut noodles, or heat it up for a mix of hot and cold!

Can you use other nut butter instead for the peanut sauce?

Yes, you can try other nut butters or seed butters. Make sure you’re using a smooth butter. The flavor will obviously change to the taste of whatever nut you are using, but it is definitely worth a try in these cold peanut noodles!

Ingredients

Units Scale
  • 1/2 c. Smooth Peanut Butter
  • 1 Tbsp. Low Sodium Soy Sauce
  • 1 Tbsp. Honey
  • 1/4 cup White Wine
  • 23 Tbsp. Lime Juice, start with 2 and adjust to taste
  • 2 tsp. Rice Vinegar
  • 1 Tbsp Fresh Grated Ginger
  • 2 Cloves Garlic, minced
  • 2 Tbsp. Cilantro, chopped
  • 2 Chicken Breasts, cooked and shredded (use leftover chicken to save time!)
  • 1 cucumber, de-seeded and sliced thinly
  • 2 scallions or green onions chopped
  • Sesame seeds, optional
  • 3 to 4 packages of Top Ramen Noodles, discard the seasoning

Instructions

This is a great way to use leftover grilled chicken. Serve it hot or cold on these peanut noodles. If you are cooking chicken for this, start by seasoning chicken with salt and pepper, and cook until it reaches 165 degrees. Allow it to sit for 5-10 minutes before shredding.

In a large bowl, whisk together all ingredients for the peanut sauce, and set aside.

Cook the instant ramen noodles according to the package directions, usually 3 minutes in boiling water. Then drain. Rinse completely with cold water until all the noodles are cold. Drain them well and toss them into the bowl with the peanut sauce. Toss the noodles in the sauce until they are completely coated.

Divide the noodles on to plates, top with chicken, sliced cucumbers, sesame seeds, green onions, or cilantro if desired.
