I have a chocolate chip cookie monster on my hands. It’s all because of my friend Jorge. On weekends when Ben is working, Emmett and I have a breakfast date at the cafe in town. We always sit in Jorge’s section, and she and I always get a proper catch up, talk about our kids, and she spoils Emmett with chocolate chips. I adore her, she adores him. It’s amazing. We have kids the same age, and it’s wonderful to have developed another mom friend in the area.

So most weekends, Emmett and I also make chocolate chip cookies so he can sneak a few extra chocolate chips, and he loves helping add in the butter and help mama with the mixer. This weekend we switched it up with a brown butter chocolate chip skillet cookie.

It is impossible to keep his chubby baby hands out of the photo, no matter how hard I try. And at some point I just let it happen. One day I will look back at these photos, remember telling Emmett to just “look with your eyes and not your hands”, failing at that miserably, and then letting his curiosity filter into the photos, letting him play with the spoons, and sneak bites of warm cookie, or steal sprinkled chocolate chips from my photo boards. I love how much he loves being with me, experiencing baking and cooking.

It is our special bond and time together. I hope it continues to grow and grow.

Description

Brown Butter Chocolate Chip Skillet Cookie is an easy crowd pleaser when you need a chocolate chip cookie fix! Brown butter makes this ultra delish!


Ingredients

Units Scale
  • 1 3/4 cup Flour
  • 1 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1/4 tsp Salt
  • 2/3 cup Brown Sugar
  • 2/3 cup White Sugar
  • 1 cup Browned Butter, cooled – See my How-To Here
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 1 1/2 cup Chocolate Chips, I use semi-sweet

Instructions

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large bowl, with a hand held mixer, or in a stand mixer,  beat together the brown and white sugar until combined.
  4. Beat in the cooled brown butter, ensuring that you scrape in all of the browned bits to the mixture. Beat thoroughly until the mix is light.
  5. Beat in eggs, one at a time, mixing well between additions. Add in vanilla extract.
  6. Add in the flour mixture, 1/3 at a time and beat until just combined.
  7. Lastly add in one cup of  the chocolate chips and mix until just incorporated. Save the other half cup for topping the cookie before baking.
  8. Lightly grease a cast iron skillet with non stick spray. Spread the dough into the skillet.
  9. Sprinkle the last half cup of chocolate chips on top.
  10. Bake for 25-35 minutes, checking to make sure it is done to your liking.
  11. Allow to rest for 10 minutes on a wire rack before serving.
  12. Serve with ice cream, or other toppings! Eat it right out of the skillet.
