Right now I am reveling in the fact that I have a bunch of dessert recipes backlogged to share with you for the rest of summer. There is mixed berry cobblers coming your way, strawberry skillet cakes, cheesecake bars with summer fruits, and probably more but right now I’m focused on these homemade peanut buster parfaits – and the fact I will have to be abstaining for the rest of summer…

Because well, guess who’s got two thumbs and just found out she has gestational diabetes. Yeah, this girl. *pause for the dramatic pause, and…* UGHHHHHHHHHHHHH.

This pregnancy was just too easy. To be fair, I escaped morning sickness and most of the nausea. The universe just thought that we should tack this onto the end of my pregnancy instead. You win, universe.

Saturday Ben graciously decided to join me at the clinic while I did my two hour glucose test. On his day off. He really is the best. After not eating for 14 hours, we opted for one last hooorah, as a gold star for starving half the day, and a just-in-case-you-failed meal of cheeseburgers, fries and milkshakes. In all hopes that it would be a gold star, we found out today, it was my just-in-case-you-fail meal. BUMMER! But that strawberry milkshake sure was good.

Homemade Peanut Buster Parfaits

So I was focusing on some ice cream favorites this summer that would help get me through the heat wave that Seattle is currently experiencing. These homemade peanut buster parfaits are one of them, because they harkin back to my childhood when we would go out to the local DQ after a long, happy week and have a treat. Usually I was a Nerds Blizzard kind of kid – I would suck all the ice cream out of the Nerds, then deposit the Nerds back into the cup so I could eat them on their own at the end. Looking back, that is like really gross.

On the odd days that I would change things up, it was all about the peanut buster parfaits. They were my step-dad’s favorite, and what my sister would usually steer herself towards, too. So with having all the right things in the fridge, I decided to make a couple for Ben and I.

They melt together so deliciously and the swirl is just too artistic for words. Don’t you think?

So please make these and enjoy a couple for me. I’m living vicariously through you at this point. You’re a good person.

Homemade Peanut Buster Parfaits

Ingredients

Units Scale
  • 1 pint Vanilla Bean Ice Cream, slightly softened
  • 1/2 cup Hot Fudge Sauce – or Nutella Hot Fudge Sauce
  • 1/2 cup Roasted Peanuts Pieces
  • Whipped Cream

Instructions

In two tall glasses, add in a few peanuts to the bottom. Pour in 1-2 tablespoons of hot fudge. Layer on top large scoop of ice cream. Push the ice cream down so it goes to the edges of the glasses. Layer with another round of peanut pieces, hot fudge, and ice cream. Complete with peanuts.

Top the two glasses with whipped cream, and drizzle on remaining hot fudge and sprinkle of peanuts of garnish. Serve immediately.
