Your weekly take-out has gone Take-IN with this Swimming Rama Chicken! One of your Thai favorites is so easy to make at home, and cheaper too!

We went to a social function this weekend! It’s not like this is a revolutionary thing for most people, but for a night shift nurse and his wife, you know how rare this occasion can be. It’s made even more rare when it’s the night shift nurse who wants to go out with his friends! So for me, I’m 100% supportive, since I drag him to events with my friends all the time – it’s totally fair to share the love.
It’s not like it’s hard to spend time with his friends – particularly his old fraternity brothers who are all really awesome guys. And at this stage in our lives, we are all married, where I get to spend time with their equally awesome wives. There are things that have changed since our college days, and some things that have most definitely stayed the same.
Beer pong – same.
Slip and Slide in the yard – same.
Old man groans as they belly flop down the Slip and Slide – Definitely changed.
Wives rolling their eyes – Check.
Reminiscing with all of these guys was great, and hearing stories of Ben, and how fond these guys are of him made me even more proud of him, too. I really found a keeper – and despite the fact that it still cracks me up that my Ben was a frat boy back in college, the notorious homebody, he has a great group of guys to go hang out with any time his wicked night shift schedule will actually allow it.
But one thing we will have to work on is him loosening his wallet when it comes to invitations to the guy’s poker game…
His reaction was “Oh, you mean, like play for money?”
“No… we play for peanut butter.”
I’ll put up that $20 buy in to keep him hanging out with his buddies. They’re such wonderful guys, and it means unlimited remote control time for me. Win-win.
One of our favorite take-out dinners is Thai food, and as routine homebodies, we routinely order the same thing. For me, it’s Swimming Rama Chicken. I love the peanut sauce, chicken and the loads of spinach makes me feel better about the choices I make in my life. But I realized it’s so simple and I had to try and make it myself – so I did and dang it, it’s GOOD! You have to try this Swimming Rama chicken yourself soon, it’s a cinch! And a serious money saver.

Swimming Rama Chicken
- 1 Boneless, skinless Chicken Breast, sliced very thin
- Salt and Pepper
- 1/2 c. Smooth Peanut Butter
- 1 Tbsp. Low Sodium Soy Sauce
- 1 Tbsp. Honey
- 6 Tbsp. White Whine
- 2 tsp. Rice Vinegar
- 1″ Ginger Root, grated. Or, if using prepared ginger, 1 Tbsp.
- 2 cloves garlic, minced
- 2 Tbsp. Cilantro, chopped
- 1 bag of Fresh Spinach, 8 cups
- 1/4 cup Peanuts, chopped optional
- 1/2 cup Rice
Season the chicken with salt and pepper. Heat the skillet over medium heat. Spray the skillet with non-stick spray. When the skillet is hot, add in chicken in a single layer and saute until the chicken is golden brown. Turn the chicken only once. Turn over and continue the chicken until finished cooking. Turn the heat off. Slowly add in the spinach to the skillet and allow the spinach to wilt, tossing to combine. Add in half of the peanut sauce to coat the chicken and spinach.
Rinse white rice, and prepare according to package directions. Set aside.
In a small bowl, whisk together the peanut butter, soy sauce, honey, white wine, rice vinegar, ginger, garlic and cilantro for the peanut sauce. If the sauce is too thick add additional white wine. Set aside.
Slice the chicken and serve the chicken in bowls, layering rice in the bottom of bowls, and top with chicken and spinach. Top with additional peanut sauce if desired and chopped peanuts. Serve immediately!
