I’m officially designating exercise is bad for you. Fine, it’s not bad bad, but ya know, just not always good. At least when it ends up you in an emergency room. One of my best friends came to town this weekend and we had a whole line up of fun stuff planned – breakfast out, a nice hike on a unseasonably warm February morning, dinner in Seattle with some girl friends and bubbles, lots of bubbles. We got through the first two items before I, being the

a) clutz

b) dumbass

c) genius

d) acrobatic enthusiast that I am completely de-railed the entire remainder of the weekend by landing myself laid up on crutches in the ER.

But while the whole experience of how I ended up in the ER was rather pedestrian (HA!!), how I got off the trail, a mile and a half into the woods was anything but ordinary. When you consider that three girls, three dogs and six singing firefighters were involved, maybe it’s not all bad?

The girls and I went up to Wallace Falls, a pretty popular trail about 45 minutes from my place, determined to enjoy the sunshine and get the dogs tuckered out. We were OMGEXCITED!

The trail was full of cute puppies and lots of people, the falls were beautiful, and we made great time getting up there! My FitBit rang in my 10,000 step accomplishment before noon – so I was feeling great! 

And then it went down hit. Literally and figuratively.

From what I was told, my fall was quite graceful. But all I really remember was it going really slow, my brain seeing my ankle turn in a way that you go “Nope, this isn’t right.” and a pop that comes with opening a fresh can of Pringles.

So down I went and my ankle swelled instantly to the size of a baseball. It was like a clown made a balloon animal out of my joints. We managed to find a stick for me to hobble on, all while Huck tried to steal it away from me for a toy, but after about a quarter mile, that just wasn’t happening any more and I went down for the count on a bench and we realized we weren’t going anywhere any time soon. It was time to call it in. A mile and a half left to go and there was no way this ankle was carrying me further.

To my rescue came six wonderful local fire fighters, hiking up the hill, splitting up their teams and hoping to run into us somewhere in the middle. The dogs were excited for new friends, and each of the guys seemed to pick out their favorite dogs, too.

How rude of me, I didn’t even do them the courtesy of getting a pedicure before my hike, so they had to see my ugly hiking feet. Each one of them was a hoot and a half, and to help pass the time as I was strapped in to the glorified wheelbarrow, they started singing. A little T-Swift, some Sinatra, and a wholleeeee lotta Disney. Like, an alarming amount of Disney. For six guys to know the entire Mulan soundtrack, they have to have a lot of time on their hands. But it definitely kept my mind off of the balloon animal ankle.

They were such good sports about the whole thing, dumb girl falling in the woods and can’t get up, and I even got a Junior Firefighter sticker for being such a good sport. Awww, shucks.

So, they loaded me up into the car, made sure to say their good byes to the dogs and away we went.  Thankfully nothing is broken – just my pride – but I do have a sexy new walking cast and crutches for the next few days. As the world’s worst patient, who hates being the center of attention or having any one do anything for me I would normally do for myself – you can imagine that this whole experience is a true growing opportunity for me. And an embarassing one at that.

But, it wasn’t all bad. Time with best friends, a beautiful day and a bunch of awesome guys who didn’t give me too much crap for ruining their sunny day game of Frisbee. Sorry guys. I will bring you ice cream to make it up to you. Promise.

30 Minute Sun Dried Tomato Basil Stuffed Chicken Thighs

Description

This is a super fast, and utterly scrumptious meal! Super crispy on the outside, these are stuffed with a little extra goodness to dress up your weeknight meal.


Ingredients

  • 4 Boneless Chicken Thighs (bone-in works if available)
  • 1/2 cup wilted, and drained Spinach,
  • 1/4 cup Sun Dried Tomato, finely chopped
  • 1/2 cup Artichokes, chopped
  • 4 leaves Basil, sliced
  • 1/4 cup Feta Crumbles
  • 1/4 cup Cream Cheese, softened
  • Salt and Pepper to taste
  • 1/4 cup Olive Oil
  • 1/2 cup Chicken Broth

Instructions

  1. Remove chicken from the fridge at least 20 minutes before cooking to let the chicken come up to temperature and take the chill off for even cooking.
  2. Preheat oven to 350 degrees.
  3. In a small bowl, combine spinach, artichokes, sun dried tomatoes, feta cheese, cream cheese, and basil. Gently spoon the filling under the skin of the chicken and pull the skin taught over the chicken securely. Season the skin of the chicken with salt and pepper.
  4. In an oven proof skillet (like cast iron or stainless steel), preheat olive oil in the pan over medium high heat on the stove. While the oil is heating, prepare chicken. Season all sides of the chicken thighs with seasoning.
  5. Place chicken, skin side down, into the pan in the oil. Cook chicken for several minutes until the chicken is dark golden brown and crispy – about 4 minutes. Using tongs, turn the chicken over and cook on the other side until dark golden brown.
  6. Pour the chicken stock into the bottom of the pan and carefully cover the pan with aluminum foil and place in the oven for 12-15 minutes until the internal temperature of the chicken reaches 160 degrees. Remove and let rest for 5 minutes before serving.
  7. Serve with roasted vegetables.
