Dinners together with Ben have become an effort in coordination and timing. By the time I get home around 5 or 6, it’s time to take the dog out, get the house organized, pretend like I’m going to go the gym, and then take care of all the blog stuff needed before the next day. With Ben and I on different schedules, he can thaw a couple of pieces of chicken in the morning and they will be ready for me to finish at night when I get home. One step is all that was needed for this dish, and even my husband who doesn’t like cooking could get this done with minimal fuss.
Finishing the dish didn’t take long either. Simply follow the directions on the package for a delicious meal. You can serve this chicken right out of the pan, or do like I did and take two forks and shred the chicken into small pieces, wrapping a heaping fork full into a leaf of butter lettuce. Simplicity is best when it comes to weeknights, people. Time is of the essence and spending time together is key. Bring it all together and enjoy every minute around the table. Together.
