This favorite Three Bean Salad is one you can take to any event, picnic or family reunion this summer! It’s enjoyed by everyone, and uses freshly blanched green beans for that summer crispness! There aren’t many times I feel bad for Ben. I try to be a good wife and not subject to overly girly things that make the normal man cringe, like date nights to overly girly movies – except that one time I made him go see Twilight with me – and the times I have taken him to the mall with him, I can count on one hand. That’s pretty good, right? I always feel bad for men at malls, sitting, sleeping, and lounging on the chairs looking like they just want to dieeeee. I have yet to figure out why they don’t all start a petition for beer servers to be walking around the mall like the old-timey cigarette girls of the 20’s! Heck, I’d probably go to the mall more often if there were beer girls walking around. Though I would probably spend more if I were swilling beer, too. 

So, during a study break Ben came out of the room to show me a new Instagram account called MiserableMen, all about men around the world waiting for their women to shop. It is such a struggle to be a man, or at least it is based on these photos. Ben was languishing and waxing poetic about how terrrrrible it is to go to the mall – which I agree, it sucks- but him trying to ellicit sympathy from me over the fewer than five times we’ve gone to to the mall well, it just wasn’t happening. No sympathy. I am the Soup Nazi of mall trip sympathy – No Sympathy For YOU!

By now, I figured internet shopping would be prevelent enough to never have to subject men to mall shopping again, but no – their struggle still goes on. Would someone think of the husbands?! Nope. Because truth be told, they are just as difficult to go shopping with as we are. 

Ketchup? Catsup?

If this is a struggle of all men, don’t you think all men would bond over this? Just think, if we could harness that struggle that all men go through – because based on MiserableMen it is a world wide struggle – we could harness world peace, because truthfully we are all not that different.

Three Bean Salad

I have been making this favorite three bean salad for two weeks straight! I can’t get enough of it, it’s perfectly sweet and tangy in equal portions and so packed with protein and freshness it will help you shimmy into bikini season, too!  And be sure to catch on yesterday’s How-To Tuesday and learn how to Blanch Vegetables! This technique will come in handy with this salad. Just look at the color difference in the photo below of fresh blanched green beans versus their canned counterpart. It’s no competition – you have to go fresh!

I based this recipe off Lori’s (Recipe Girl’s) Three Bean salad, using what I had on hand and tweaking it to my tastes with a little less sugar and a little more vinegar. It’s definitely a winner in every sense of the word!

Description

This favorite Three Bean Salad is one you can take to any event, picnic or family reunion this summer! It’s enjoyed by everyone, and uses freshly blanched green beans for that summer crispness!


Ingredients

Scale
  • 1/3 cup Apple Cider Vinegar
  • 2 Tbsp Sugar
  • 2 Tbsp Vegetable Oil
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 2 cups Green Beans, freshly blanched if possible or 1 can cut green beans
  • 1 can, 15.5 can Garbonzo Beans, rinsed
  • 1 can, 15.5 can Kidney Beans, rinsed
  • 1 large Shallot, minced
  • 1 clove garlic, minced

Instructions

  1. Whisk together sugar, oil, salt, pepper, garlic and shallots. Set aside.
  2. In a large bowl stir together green beans, Garbonzo beans, and kidney beans. Pour the sauce over the top and fold together to combine until all vegetables are coated in sauce.
  3. Cover and place in the fridge to chill and allow the flavors to meld. Serve cold and stir before serving.
