One of my favorite How To Tuesday‘s is the DIY Infused Vodka. It’s totally simple, and the possibilities of what you can infuse are endless!! I mean, people infuse vodka with Skittles and Bacon! Not together, that would be one step too far.  But Beets!! Don’t freak out on me just yet – they are earthy, gorgeous in color, and they make an incredible addition to your Saturday morning hair of the Bloody Mary. It is easily my favorite brunch time sip!

The first time I ever had beet infused vodka was on a brunch date in Seattle with a couple girlfriends at my favorite hole in the wall restaurant with the most amazing taso ham eggs benedict known to man – Hattie’s Hat. If you ever find yourself in Seattle, head to Ballard on a Saturday morning and do yourself a favor, get the eggs bene and a Bloody Mary. Their Beet Bloody Mary is a limited edition treat, but if you can get one – do it!!

I can’t help but think of Dwight Schrute whenever I eat anything with beets. Were you a fan of The Office like Ben and I? I know that the first time I watched it is was the most physically uncomfortable show ever. Ben got me hooked on it when we first started dating, so obviously, I was trying to impress him. It had me recoiling into the back of the sofa and trying to wrestle the remote away from him to change the channel. I was a peach.

But soon enough he wore me down and I started willingly watching it. Then I started enjoying it. Then, I got hooked. My crush on Jim Halpert knew no bounds, and my aversion to Michael Scott knew no depths.

And if beets aren’t your bag, think of this as a Dwight Schrute tribute drink. Then pop in an episode of The Office and maybe it won’t be as awkward two drinks in… not likely. But you know, it’s worth a try!

Ingredients

DIY Infused Vodka

  • 2 Beets
  • Bottle of Vodka, your choice of brand
  • 1 quart jar with lid and seal

Beet Infused Bloody Mary

  • 4 ounces Beet Infused Vodka
  • 1 cup Bloody Mary Mix
  • 1/2 cup V8 Vegetable Juice
  • Tabasco Sauce, Chipotle version is good!
  • 2 Slices Bacon, cooked
  • 1 Lemon, sliced
  • Pickled Okra
  • Cilantro, for garnish
  • Red Onion, for garnish
  • Ice

Instructions

Beet Infused Vodka:

  1. Scrub and peel the beets. Slice into chunks or side slices. Place into the quart jar.
  2. Pour the vodka over the top of the beets to fill the jar. Seal and place in fridge.
  3. Shake or turn every day for about two weeks for a strongly infused vodka.

For Beet Bloody Mary:

  1. In two large glasses, add in ice, pour two ounces of beet vodka into each glass.
  2. Divide Bloody Mary and V8 mix between the glasses and stir to combine. Sprinkle in Tabasco sauce if you want a spicy kick.
  3. Skewer the pickled okra, red onion, and lemon onto a toothpick and place on the lip of the glass.
  4. Add in cilantro and stick one slice of cooked bacon into the bloody mary. Serve immediately.
