I can’t decide if these are more blintze than pancake or pancake than blintze. This is my eternal struggle. And it’s starting to hurt my head. For two weeks people I’ve been contemplating this issue. Pain. Full. Good thing these blueberry cottage pancakes are tasty or I would have given up on this issue long ago.

And then along with this struggle comes the feeble attempts to get the repeating loupe of Austin Powers movie quotes out of my head.

Bong and a Blintze? Schmoke and a pancake? Pancake?  Blintze? Pancake? The fight goes on. Someone come sit me in the corner or something.

My teenage past-self is absolutely still amused (and grossed out) by those movies (particularly Goldmember) and my current self can’t believe I almost bought the three pack of them at Target when I saw they were on sale for like $10 for all three. I might just have to go back. Maybe. Don’t hate me. I know, trash. My mind is melting. But with all the Downton Abbey high-brow, pinkies-up stuff I watch, ya gotta give me credit and and allowance for some crappy mind numbing form of entertainment. And kinda like TWSS jokes, stuff from Austin Powers will always be funny. Definitely not classy, but funny. And stooopid. I’m coo’ with that.

Also – When was the last time you went out on a school night? Frankly, those days of out on weekday nights are so infrequent, I’m pretty certain that the last time was the last day of my college experience. Nearing on 5 years ago. Really, I’m that lame. And I don’t even have kids!! I’m a hermit.

Anyway, my absolutely stunning blogging friend Heather – had a Girls Night Out shindig for the soon to be release of her stunner of a book and well, like the rebel I am (SIKE), had to go out and party hard to celebrate such a fantastic blogger, inspiration and friend. Woman knows how to pull of some fab coral heels that I contemplated stealing right off her feet. I just adore her. And the whole point of this is – that next week I’m going to be showing off her book AND giveaway a copy of it, signed by Heather herself! You don’t want to miss this. It’s sitting on my night stand as I type, I have literally been flipping through it trying to pick just one recipe to show you. This drills down to the root of my indecisiveness.

Yield: 12 Pancakes

Cottage Blueberry Pancakes

Ingredients:

4 Eggs
1 cup Cottage Cheese
½ cup Flour
1 Tbsp Sugar
4 Tbsp Butter, melted
1 tsp Vanilla
½ tsp Lemon Zest
1 ½ cup Blueberries

Directions:

In a bowl, beat eggs until throughly whisked. Stir in flour, cottage cheese, sugar. Stir in melted butter, vanilla and lemon zest. Mixture will be slightly lumpy from cottage cheese.

Heat a large non-stick skillet over medium to medium high heat. Grease pan with non-stick spray or additional butter. Pour ¼-⅓ cup of mixture into the pan. Sprinkle batter with a few blueberries. Cook until bottoms have turn golden brown. With a spatula quickly flip onto other side and continue to cook until the other side turns golden brown.

Place pancakes onto a baking sheet on a 200 degree oven to keep warm until remaining pancakes are done. Serve warm and devour!
