Ben’s sister Michelle is a complete whizz in the kitchen. This girl is incredible. She’s been published in magazines with recipes she’s created and never even tested. Family Circle published her Mediterranean Barley Salad (not tested), and she won a first place prize at the National Lentil Festival for her Lentil Cheesecake with Streussel (tested a couple times before submitting and winning!) .

Let me tell you – she’s amazing beyond belief!!

How she does this without testing recipes is astonishing – I wish I had her talent. And her apple waldorff-ish salad is another one of her creations I’ve fallen in love with.

It’s very simple, healthy, yummy, and colorful.

For your Grocery List, add.
~ 3 Large Apples (Honeycrisp are great! Sweet and Crunchy)
~ Heaping 1/2 cup Fat Free Plain Greek Yogurt
~ 1/4 c. golden raisins
~ 1/4 c. Original Craisins
~ 1/3 c. halved Pecans
~ Zest of one orange
Zest your orange carefully…I’ve cut myself before (yup, I’m a genius).

Chop your apples up into bite size pieces. Place in a medium bowl.

Give 1/4 of apple to your favorite labra-dork.

Take heaping 1/2 cup of plain greek yogurt and mix in with apple chunks in the bowl.

Add in raisins, craisins and zest. Mix throughly.

Top with pecans and mix again.

Cover and let sit in your fridge until cold and properly melded.
This is great as a snack after school, or a workout, for breakfast or just cause. I’m going to have some now. Yum-town!!
