10 Ultimate SuperBowl Dips - www.countrycleaver.com

SuperBowl is one week away and my Seahawks are going all the way. It may be overly optimistic to think we are going to pull off a “Re-Pete”, but you can bet I am going to be cheering them on like there is no tomorrow. But it’s a throw down between my two favorite quarterbacks,  Mr. Hometown Hero Wilson and Mr. Butt Chin Brady. I adore them both for very different reasons, and though I will be utterly crushed if the Seahawks don’t win, I will vow to console myself with plenty of dips.

Below are my Top 10 (okay 11 – because I can’t count or because I love dip so much!) that are the ultimate SuperBowl game day treats! There are cheesy dips, hot dips, cold dips, and even two of my all time favorite SWEET dips! It’s okay if you are a little OMGSOEXCITED, too. Get geared up friends! And get ready for another Seahawks victory

Things accomplished in Hawai’i:

1) Youngest sister got married. Check. (I acted as second photographer after the real photographer LEFT! Check.)

Screen shot 2015-01-19 at 7.38.56 AM

2) Drove around the entire island of Oahu with Ben.

3) Watched the surfers on the North Shore, on the craziest waves ever!! The sound was incredible!

4) Went snorkeling right outside our front door.

5) Stopped by for a visit with my blog friend The Grommom, Monica Swanson, and her family! So many exclamation points!!!

6) Slipped on a bunch of beach rocks and biffed it really bad giving myself a really scraped up knee and foot that hurt like a mo’fo’. But hopefully make me look like a b’a’.

7) Watched the most heart stopping, emotionally wrenching game of Seahawks football known to man… in a beach house. On the north shore. As the waves rolled in. In 80 degrees.  In January.  The struggle is so real people.

Since we, the 12th Man, are now Super Bowl bound (OMG BREATHE!), I can post my SuperBowl recipes with a little extra pride, because I know I will be serving these come day with a little extra bounce in my step, and a smile on my face instead of eating my feelings and just biding my time to the commercials.

This recipe for the Sweet and Tangy Apricot Chipotle Meatballs actually really comes from Julie {Table for Two’s} Sweet and Tangy Meatballs! I’ve been friends with Julie now for YEARS (Julie, can you believe it? YEARS?!)

They have been on my list of recipes to make for ages, and it wasn’t until a couple of weeks ago that I was hosting a dinner party that I had a panic for an appetizer that I could finally bust these bad boys out! I was pressed for time and these came to the rescue. So if you’re in a pinch for apps, or in a rush for game day grub, seriously MAKE THESE! It’s so wickedly easy – and these were the first thing to disappear.

These really work great with whatever jelly or preserve you have on hand, so don’t go bonkers. Just whatever you do make sure you make these! Check out Julie’s original recipe to see what jelly combo she used in hers, too and try them both!

The out of office notifications were sent out. Most were accepted. One was not. It came back with the response, “This vacation is declined. It will only be approved upon receiving a pineapple upside down cake.” Did I mention that we are off to Hawaii in the morning?

Now, I spoil the guys at work. Spoil them. The weekends baking projects inevitably find themselves back in the office with them hovering over them, or hacking off one little bit at a time pretending like one bit isn’t going to derail the diet or they can tell their wives “hunny, I didn’t have a whole doughnut today…”

But since I will be gone for a week and a half, I figured this one request could be accommodated. And a pineapple upside down cake had been on my must make list for ages. I just didn’t need to tell them that.

Dinners together with Ben have become an effort in coordination and timing. By the time I get home around 5 or 6, it’s time to take the dog out, get the house organized, pretend like I’m going to go the gym, and then take care of all the blog stuff needed before the next day. And let’s not forget that I have to wake the sleeping bear from his slumber before he goes on shift.

Those few hours that we are together every evening are important to us. We get to catch up, share stories of our day, and tag team scratching the dog, whose allergies are out of control. The last thing I want to do with those precious few hours is spend them in the kitchen.

Campbell’s Oven Sauce in Sweet Teriyaki Chicken was perfect with the chicken breasts Ben thawed a couple days ago, and coupled with butter lettuce, it was a full bite of comfort in just a couple of simple steps.

With Ben and I on different schedules, he can thaw a couple of pieces of chicken in the morning and they will be ready for me to finish at night when I get home. One step is all that was needed for this dish, and even my husband who doesn’t like cooking could get this done with minimal fuss.

IMG_8497

Finishing the dish didn’t take long either. Simply follow the directions on the package for a delicious meal. You can serve this chicken right out of the pan, or do like I did and take two forks and shred the chicken into small pieces, wrapping a heaping fork full into a leaf of butter lettuce. Simplicity is best when it comes to weeknights, people. Time is of the essence and spending time together is key. Bring it all together and enjoy every minute around the table. Together.

Sweet Chicken Teriyaki Lettuce Wraps

Prep Time: 15 Minutes

Cook Time: 40 Minutes

Total Time: 65 Minutes

Ingredients:

1 1/2 pounds of Chicken Breast

1 package Campbell's Oven Sauce in Sweet Chicken Teriyaki

1 Red Bell Pepper, sliced

1 Green Bell Pepper, sliced

1 Onion, peeled and sliced

1 head Butter Lettuce, rinsed and dried

Directions:

Preheat the oven to 400 degrees.

In a 13x9 inch pan, add chicken to the pan, and surround with sliced vegetables.

Pour one package of the Campbell's Sweet Chicken Teriyaki sauce over the top. Place in oven and bake for 40 minutes.

Remove from oven and using two forks, shred the pieces of chicken. Serve with rinsed and dry butter lettuce leaves to make into hand held wraps.

Leave it to my mother to keep every email she has ever received. I also see that the apple doesn’t fall far from the tree, since my email inbox at home is packed with over 7,000 emails and my work email is up to 14,000. But that’s beside the point. I’m more thankful than ever that she hasn’t deleted any emails in the last seven years, because some of those emails from way back when include the first photos we have of Huck that had long since been lost with the death of a hard drive and my complete inability to back up my hard drive.

Bad Megan! Good Gammy!

Hot Roasted Red Pepper Olive Dip - www.countrycleaver.com

You can’t have a game day without dip. It’s just one of those things that is impossible. And you can’t have a game day without TV. A really, really big one. Well, that nearly happened. This weekend is my company’s post-holiday party – thankfully they spare us squeezing in one more party during the holiday rush and do it post-holiday – but it just so happens to be on a Saturday night when the Seahawks are playing in town and when we will all be down town just a mile away from the stadium eating food, dressed up, being nice and rubbing elbows with others in our company we have never met, and in spanx that we had gladly put in the back of our drawers until the next season we were forced to yank them out again when the Christmas cookies came a callin’. Out they all come again…

But this year, the company did good and we locked down a Tom Douglas restaurant all to ourselves and arranged for three huge projectors to proudly display the Hawks game for us all to see. Or they just wanted us all to show up in the first place and this was the best way to accomplish that. Either way, it will be good food and a win for us.

How to Keep Cilantro Fresh for Weeks!! - www.countrycleaver.com

When Ben and I moved in together, we had some issues with cohabitating… it’s always a challenge learning to live together. Like learning who likes to sleep on which side of the bed, and how he likes to organize the fridge… or how I don’t organize the fridge, like at all. My organizational structure was something like Open-Door-Throw-In-Before-It-Falls-Out. One day he was attempting to organize the fridge while I was at work and he found that I had two half empty cartons of eggs tucked in the back of the fridge I didn’t even know I had. And a couple of bags of herbs that had turned to goo… It was a problem.

It was a good things eggs last for a long time. Herbs? Typically not so much. BUT! They can! Just not wadded up in the back of the fridge.

The sheer number of bundles of cilantro I have thrown away over the years is staggering! But I figured out, thanks to my mom that they can last for WEEKS in the fridge with a few little tricks!
How to Make Cilantro Last for WEEKS! - It's so simple, and it will stay fresh in the fridge for ages!
