One of the biggest shifts in my identity since becoming a mom to little Tater Tot, is that I need to give myself a lot of GRACE. I never really realized what kind of pressure I put on myself until I was under the control of a tiny little 8 pound dictator who refuses to be put down, and finds himself more content falling asleep on your chest for hours at a time, and somehow KNOWS when you are trying to get dinner on the table so you can eat, or write a blog post, or even pee on your own.

But those steel blue baby eyes and little dimples get me every. dang. time. So all is forgiven.

As I continue to learn to adapt to this new radical shift in our daily lives, my cooking style has too. But as anyone knows, you can’t survive on sandwiches alone, I still crave a hot meal at the end of the day. This easy apple stuffing pork chop bake is one dish that I have made for years when the weather turns crappy and cold, and I need a little taste of Thanksgiving without having to go through the whole cook-an-entire-Thanksgiving-dinner. This one – is only THREE ingredients!

Ben, Emmett, Huck, and I are finding our new groove, and as we continue in learning our new normal, and settling in to our new family life, I am constantly surprised by the progress we have made.

Emmett is officially one more old and while sometimes I get frustrated by what I see as “slow progress” and little set backs, I have to pause and see that every day we have another minor victory that moves us forward. For me, learning to give myself time to adapt and find my new normal is something I had high expectations for – wanting to be perfect from the get go – even though I had no idea what I was (or still am) doing as a mom. Through all those night time tears, when he wouldn’t latch, or I had to change three diapers in a row because of a blow out, or him creating a water feature on the changing table, or spitting up on a fourth onesie because of an upset tummy – I needed to give myself the grace to know that we are in it together and we are OK.  And that Ben and I are doing a GOOD JOB as parents.

  • Boneless Pork Chops, approx 1 inch thick
  • Stove Top Stuffing
  • Can Apple Pie Filling

Life’s little victories are all around us, even when it’s hard to see them through the tears (both Emmett’s and my own). It’s been four weeks and I am finally seeing those little victories, even if they are behind us.

So, to remind myself of how far we have come, here is my victory list!

  • ANYTIME we made it out of the house ON TIME, instead of 20 minutes late.
  • When we didn’t have any more doctor’s appointments for Emmett or myself and my post-pregnancy pee problems! (more on those in MY side of the birth story – coming soon)
  • Getting to take a family walk to the park.
  • Getting to take an even longer family walk without a catheter!
  • When I made my first batch of cookies post-birth
  • I raked leaves with Emmett in the Ring Sling on a sunny fall day!
  • Sleeping 3 1/2 hours at a time instead of the 2 hour stretches we have been doing.
  • Emmett not spitting up after a meal!
  • Making a recipe video!
  • Getting to take a shower!
  • Actually putting on mascara and real jeans – fine, still maternity jeans, but JEANS no less!
  • Going to the pumpkin patch
  • Successfully feeding Emmett in the car when we were out doing errands, and changing him in the back of the Outback.
  • Making it through a grocery store run with him asleep the entire time in the car seat in the cart.
  • Any day that I don’t end up in tears.

Some of these are small, and some of these are huge victories. But regardless, they are ours and let me know that in one month we have made some really stellar strides in finding our new normal.

It doesn’t get any easier than this three ingredient meal! And best of all, this easy apple and stuffing pork chop bake makes your whole kitchen smell like Thanksgiving dinner!


Ingredients

Units Scale
  • 4 4-ounce Boneless Pork Chops, approx 1 inch thick
  • 1 box Stove Top Stuffing, prepared (1 1/2 cup water, 4 Tbsp Butter Required)
  • 1 can Apple Pie Filling

Instructions

Preheat oven to 350 degrees. Grease a casserole dish with non-stick spray.

Prepare Stove Top stuffing according to package directions and set aside.

In the casserole dish, place the pork chops with as much space between them as possible. Top with can of apple pie filling on top of each pork chop. Spoon prepared stuffing on top of the pork chops and apple pie. Cover the casserole dish with foil and bake approximately 35-45 minutes, or until the pork chops reach at least 150 degrees. Remove foil the last 10-15 minutes to crisp up the stuffing.

Let rest 10 minutes, then serve.
