New year, new resolutions, and new ways to try and making eating healthier bearable… Oy vey. This weekend saw me prepping for my latest round of Whole30 like a complete maniac. The kitchen was in disarray, dishes were everywhere, and I’m pretty sure all the dishes made my hands chap. It’s super sexy.

I spent day after day of the new year with large pans of vegetables, chicken, and soup, all trying to prepare mass quantities enough food for a week so that I could be secure knowing that I wasn’t going to die of Whole30 induced starvation for not preparing enough compliant breakfasts, lunches, and dinners to keep me on plan. But with all those dishes, it was just too much.

And sadly it wasn’t until the very end and this recipe came to me that I knew preparing for success, and a healthy, inspired meal, could be so easy.

Ben and I had time off this weekend to spend together and run the errands that normally I do solo. Even the most mundane of things can be more fun with someone around. I ran aisle to aisle checking labels, double checking my list, and grabbed a couple of bags of these Birdseye Steamfresh bags of green beans and brussels sprouts not quite sure what I could do with them at the moment – but I knew it would come to me.

And it did.

I gathered a few remaining things I had on hand, ginger, garlic, sesame seeds, and some toasted sesame oil and got to work. With the day fading, much like my patience, I put a bag of green beans into the microwave, and in the time it took them to steam, I whipped up a quick toss sauce of minced garlic, salt, pepper, grated ginger, and sesame oil. Into the bowl went the beans and with a quick toss, they were all deliciously coated.

The half that I didn’t eat straight out of the bowl, I packed away for my lunches for the rest of this week. The toasted sesame and garlic are a match made in veggie heaven, with the ginger brightening the whole green bean dish.

  • Garlic
  • Salt
  • Ground Pepper
  • oasted Sesame Oil
  • Fresh Grated Ginger

Ingredients

  • 1 package Birds Eye Steam Fresh Green Beans
  • 2 Cloves Garlic, minced
  • 1/4 tsp Salt
  • 1/4 tsp Ground Pepper
  • 1/2 tsp Toasted Sesame Oil
  • 1 1/2 tsp Fresh Grated Ginger

Instructions

  1. Prepare the Birds Eye Steam Fresh Green Beans according to the package directions.
  2. In a mixing bowl, whisk together the remaining ingredients to a form a dressing.
  3. Once the green beans are cooked completely, pour them into the mixing bowl and toss with the dressing to coat the beans completely. Serve immediately.
