This week there are only four days of work, and I am pumped. If things have been a little quiet ’round these parts, let me catch you up on the big details. Ben is officially done with nursing school, and we are heading back to the Palouse for four days for an early anniversary get away.

Our yearly tradition continues, and it’s full of aww-inducing horrible lovey dovey stuff. Wanna know what the tradition is?

First off, we make the midnight drive to the in-law’s. Spending you early anniversary at your in-laws, isn’t albeit the most romantic – but at least we will be in the wheatfields, and HOME.  Then, it’s up to the orchard we took our wedding photos at, to go pick peaches! And, hopefully, avoid Ben getting stung by bees.

Then it’s to our winery we got married at! They are starting to remember us, and we always do a quick catch up, get a bottle or two of wine, and then come home.

It’s been nearly a year since we have been back, and with Ben being in school for these last four years, and me working at the real job – and well, this – it hasn’t left us much time to make the trip we look forward to most every year.

Ben is anxious to get us more photos of the wheat fields to hang around the apartment. I’m hoping we can sneak out to the farm for some night time photography of the meteor shower.

It’s hard being so far away from the place that most feels like home to you, but the photos are always a nice reminder of the place we love most. 

So, I have to make it until Thursday at work. I can manage four days. And then, it’s time to load up the Outback, throw in the dog, and hit the road for four more days of fun.

I’m also going to make sure that I pack up some extra Sahale Snacks, and these Honey Almond Cranberry Energy Bites for the trip. Description

These honey almond cranberry energy bites are packed with protein, healthy fats, and fiber to give you lasting energy and a healthy snack that won’t weigh you down.


Ingredients

Scale
  • 1 cup Fiber Bran Cereal
  • 10 Pitted Dates
  • 2/3 cup Sahale Honey Almond Snacks, divided
  • 2 Tbsp Honey
  • 4 Tbsp Cream Cheese, softened
  • 1/4 cup Dried Cranberries

Instructions

  1. In a food processor, add in 1/3 cup of Sahale Honey Almond Snacks. Pulse until the snacks are chopped very fine. Set aside in a small bowl.
  2. In the same food processor, combine fiber cereal, pitted dates, 1/3 cup of Sahale Honey Almond Snacks, honey, cream cheese and dried cranberries. Pulse the food processor until the mixture resembles coarse sand and begins to stick together.
  3. Using a small cookie scoop, to make even balls, divide up the mixture and roll into tight balls. Roll each one into the finely chopped Sahale Snacks.
  4. Place the finished bites onto a plate and refrigerate for at least 30 minutes before serving.  Store in the fridge for up to two weeks in a sealed container.
