Southwestern BBQ Bacon Burger

Light up the grill for this southwestern BBQ Bacon burger with crispy bacon, fire grilled corn, cowboy candied jalapenos, and crunchy jalapeno chips on top! Don’t forget the BBQ sauce and pepperjack cheese!

It’s a sure sign of summer, the grills are fired up and we are ready to go! I spent some of my weekend around the grill with friends, drooling as they tended the BBQ with deft and style – these guys were practically professionals. And I ate way too much, as exhibited by my need to unbutton the top button of my jeans on my drive home so I could breathe.
Then I turned to my own grill for these burgers. The season of grilled meats are upon us. It’s time to celebrate.
It’s not like we didn’t have a clue – I mean, we started with Hot Dog Week, and how apropo we are rolling right into burgers? It’s like, a sign.
If you take me to a restaurant, the first thing I’m flipping to is to find out if there is a burger section in the menu. It’s really awful and cliche, but it’s true. I love a good burger joint, and the higher they are piled, the better.
This one has been on my mind for a little while, trying to think of all the ways I can cram about 8 different kinds of peppers in between one bun, but I think I have it.
There is chipotle in the faux-aioli, candied jalapenos on top, jalapeno chips, and pepper jack cheese. Somehow I didn’t realize this until after I was done – but I missed the grilled Anaheim pepper in the veggie basket, and forgot it!! I mean, we almost had something here. But with all those peppers, they really didn’t add an inordinate amount of heat – just enough to clear your sinuses.
And breathe innnnn. Ahhhhh.
So burger month is my jam. And I found about 30 other friends who love it just as much as I do. Thanks to Kita from Girl Carnivore we all rallied together to celebrate our summer favorite – AND GIVE A TON OF STUFF AWAY!!!

Burger
- 1white or wheat bread
- Milk
- Worchestershire Sauce

Ingredients
- Burger
- 1 Slice white or wheat bread, crust removed
- 2 Tbsp Milk
- 2 Tbsp Worchestershire Sauce
- 1 Clove Garlic
- Salt and Pepper to taste
- 1 1/2 pound Ground Beef
Fixins
- 4 High Quality Hamburger Buns
- 1 Ear Corn, husked
- 4 Slices Pepper Jack Cheese,
- 1/2 cup Mayonnaise
- 1/4 cup Chipotle Pepper Mustard
- 1/4 cup Cilantro
- 6 Slices of Bacon, cooked and chopped
- 1/2 cup BBQ Sauce, like Head Country Original
- Candied Jalapenos
- Jalapeno Chips, crunched
Instructions
TO PREPARE HAMBURGERS:
In a bowl, crumble the bread into small pieces. Pour the milk, Worcestershire sauce, salt, pepper, and garlic over the top. Using a fork, mix the ingredients together to form a paste. Next, add in the ground beef and combine with the bread/milk paste and form into four burger patties.
Form into four patties, with about 5 inches in diameter, with slight depressions in the middle of each.
TO COOK THE HAMBURGERS:
Preheat the grill over high heat for at least 15 minutes. Cook the hamburgers on one side for about 3-4 minutes. Do not press or move for this time. Turn burgers, gently, and continue to cook another 3-4 minutes for a medium well done burger (or about 5 minutes for a well-done burger).
At this time, add the corn to the grill and allow to char on all sides.
During the last 1-2 minutes, add the pepper jack cheese to the hamburgers to allow to melt. To the top rack of the grill, lay the hamburger buns face down to toast. Remove when golden brown
Remove burgers, buns, and corn from the grill and let rest for 5 minutes prior to eating.
TO ASSEMBLE HAMBURGERS:
In a small bowl, whisk together the mayonnaise and chipotle pepper mustard. Set aside. Chop cilantro set aside. Chop cooked bacon, set aside. Slice kernels away from grilled corn into a small bowl. set aside.
Top toasted hamburger buns with chipotle aioli. Top with cheese covered hamburger, and layer on top additional BBQ Sauce, candied jalapenos, jalapeno chips, grilled corn, cilantro, and bacon. Cover and serve.

Any epic burger must have pan-fried onions where they are golden brown and slightly crispy.
