Did you watch the Oscars last night? Me neither. I usually browse my favorite gossip websites the next day to get the low down on the best and worst dressed, the who-stole-the-show moments, and find out who really won the prizes that I care about – best actor/actress and best picture. I’ve come to the conclusion that award shows are like a buffet line, they put up all the useless categories that no one cares about at the front of the show, like the salads of at a buffet line. And you don’t get to the carving station until the end when you’re already over loaded and regretting everything you put on your plate before.

You’re so done with the whole experience and sitting there watching TV for the last two hours, realizing you watched (while completely valid and hard earned categories), best sound editing, and production design and you are glazed over, and have been sitting on the couch with your jeans button undone to relax a little. Just like a Sunday post-church buffet.

Make your own Sunday carving station at home, one that is far tastier than a buffet line, and you don’t have to sit through 2 1/2 hours of Oscar nonsense to watch it. You’re welcome, America!

I accidentally bought way to much meat at the store this week, including one of those rotessiere chickens, when I already had one thawing in the fridge. And this pork loin. Really I don’t know why I thought two people needed THREE different meat products in the fridget at one time, so I’m making a ton of chicken soup and chicken enchiladas this week to take care of that mess. And now we have pork loin for Ben to eat before work this week!

So maybe my mistake was a happy one since now I won’t have to scramble for dinner ideas now. Happy accidents I guess and small victories for when you literally can’t even. And I have a feeling this week, will be one of those weeks. Stay tuned.

Description

This spicy and tangy glaze will liven up your weeknight meal! Simple ingredients are all it takes for this chipotle lime glazed pork.


Ingredients

Pork Roast

  • 1 1/22 pound Pork Loin Roast
  • Sea Salt
  • Ground Pepper
  • 1 1/2 tsp Onion Powder
  • 1/4 tsp Red Pepper Flakes
  • 2 Tbsp Vegetable Oil

For Chipotle Lime Glaze

  • 12 Chipotle Peppers in Adobo Sauce, minced
  • 2 Large Limes, zested and juiced
  • 1/2 cup Honey
  • 3/4 tsp Cumin

Instructions

  1. Set roast on plate, and place on counter  for 1 hour prior to beginning to cook.
  2. Dry throughly with paper towels. Season heavily with salt, pepper, onion powder and red pepper flakes.
  3. Preheat oven to 350 degrees.
  4. In a 10″ cast iron, or oven proof skillet, heat vegetable oil. Bring the oil to nearly smoking. Sear all sides of the roast until dark golden brown, approximately 2 minutes each side.
  5. Place skillet in the oven. Roast for approximately 30 minutes, or once the thickest part of the roast reaches 145 degrees.
  6. While the roast is in the oven, stir together the remaining ingredients for the glaze. Baste roast with glaze every five minutes.
  7. When the roast is removed from the oven, tent with foil and allow to rest for 10 minutes.
  8. Slice and serve.
