It’s Friday, can I get a TGIF?! Strike one more week off the list. Did you have a good one? Me, too. And it’s over. So I’m just looking forward to sleeping in, walking the dog, taking a nap, cooking and taking a second nap like it’s my job. There ain’t no shame in the napping game.

When Ben started school, and I was (well, still am) working full time, I didn’t really plan out dinners for us very well. Not my strong suit. Over the last few years it’s gotten better, but I still find myself sticking to some of the same routine comfort dishes that are quick to make and super yummy. These All American Mini Meatloaves are some of our favorites! They are FAST, super delicious, and make excellent left overs. Best of all – these only require one bowl and one pan. America’s Test Kitchen Quick Family Cookbook came to the rescue again with this one and it’s definitely in our routine.

You just don’t have to tell Mom, they might actually be better than hers. Shhhh.

Yield: 4-6 Meat Loaves

All American Mini Meatloaves

Ingredients:


  • 1 1/2 pounds Ground Beef

  • 1/3 cup minced Parsley, (or 1/4 cup Freeze Dried Salad Blend Herbs)

  • 2/3 cup Panko Crumbls

  • 1/4 cup Milk

  • 3 Tbsp Worcestershire Sauce

  • 1 Egg

  • 2 Tbsp (Good Quality) Dijon Mustard

  • 1 Garlic Clove, minced

  • 1/2 tsp Salt

  • 2 tsp Vegetable Oil

  • 1/2 cup Ketchup

  • 4 tsp Apple Cider Vinegar


Directions:

Preheat oven to 350 degrees.


In a bowl, mix together the panko, parsley, milk, Worcestershire sauce, egg, mustard, garlic, and salt. Add in ground beef and mix with your hands until evenly combined.


Divide the meat into 4-6 balls, depending on how large you want your meat loaves. Gently molt them into 4x3 ovals Heat oil in a 12 inch skillet. Add in loaves and cook until browned on each side - about 3 minutes. Gently turn.


In a small bowl, whisk together the ketchup and vinegar. Add to the top of the meatloaves prior to placing them in the oven. Bake in the oven for about 15-20 minutes, or until they reach 160 degrees internally. Serve immediately.
