Romance is not dead… just kidding, it totally is. But it is alive and well in my imagination, as well as Nicholas Sparks’, too. I was traveling over the weekend and as always, I have to pick up a book on the way to read on the airplane. It’s the one chance I get for uninterrupted reading time, and my latest book pick up was his book The Longest Ride. It has cowboys, so it was the obvious choice.

And apparently it’s becoming a movie this spring starring none other than Clint Eastwood’s son. *Cue the entire collective of Wrangler loving women sliding off their chairs*

So I was sitting on the couch last night flipping away furiously, when what do I hear from Ben who had just given himself a haircut that killed romance always and forever?

“Honey, can you come trim my neck hair?”.

Romance. Dead.

A few months ago the cheapest man on the planet bought a pair of clippers to give himself a hair cut, and he starts his new hospital job today so he wanted to look spiffy. But just as I was drowning in images of Wrangler clad cowboys, I hear that. And *POOF* away the gloriousness went and back to reality I snapped.

But even with that neck hair trimming reality – it’s not too shabby. Ben, the farmer turned nurse –  has worked his tookus off for the last three years to give us a better life and provide for our little family and he finally starts his dream job today. So for that, I would gladly trim his neck. Well, “gladly” might be a bit of a stretch, but “do it” I would.

Still, it’s not half bad if I do say so myself.

And even better – he still rocks a pretty mean pair of Wranglers. The country man I married is still alive and well in there. Even if he doesn’t ride horses.

Description

These individual Crispy Chicken Goat Cheese and Cherry Salads are perfectly portioned for your lunch time with individual Star Fine Foods Balsamic Vinegar Portion Packs.


Ingredients

Units Scale
  • 4 Crispy Chicken Strips, prepared and shredded
  • 1/4 cup Goat Cheese, crumbled
  • 1/4 cup Red Onion, thinly sliced
  • 1/2 cup Dried Cherries
  • 1/2 cup Walnuts, chopped
  • 1 head Red Lettuce, chopped
  • 1 head Iceberg Lettuce, chopped

Instructions

  1. Prepare chicken strips according to package directions, if preparing frozen chicken strips at home. Shred and set aside.
  2. Wash lettuce and chop into bite size pieces. Peel and thinly slice red onion.
  3. Combine all ingredients into four small bowls, and top with chicken, goat cheese, red onion, dried cherries, and walnuts.
  4. Serve immediately with Star Balsamic Vinegar and Olive Oil Portion Packs dressing.
