You can’t have a game day without dip. It’s just one of those things that is impossible. And you can’t have a game day without TV. A really, really big one. Well, that nearly happened. This weekend is my company’s post-holiday party – thankfully they spare us squeezing in one more party during the holiday rush and do it post-holiday – but it just so happens to be on a Saturday night when the Seahawks are playing in town and when we will all be down town just a mile away from the stadium eating food, dressed up, being nice and rubbing elbows with others in our company we have never met, and in spanx that we had gladly put in the back of our drawers until the next season we were forced to yank them out again when the Christmas cookies came a callin’. Out they all come again…

But this year, the company did good and we locked down a Tom Douglas restaurant all to ourselves and arranged for three huge projectors to proudly display the Hawks game for us all to see. Or they just wanted us all to show up in the first place and this was the best way to accomplish that. Either way, it will be good food and a win for us.

Football means food, it just does. You can’t escape it and although I grew up with a football loving dad, it wasn’t until I married a football loving farmboy that I grew to actually love the game. So here I am, loving the game, the food and on Super Bowl Sunday – the commercials.

The holidays may be over, but football is not! Park it and load up for game day with this Roasted Red Pepper Olive Dip for the play offs today!


Ingredients

Units Scale
  • 1 8oz package Cream Cheese, softened
  • 1/2 cup Olive Oil based Mayonnaise
  • 1/2 cup Roasted Red Pepper
  • 1/2 cup Artichoke Hearts, drained
  • 1/2 cup Star Fine Foods Spanish Olives with Pimentos
  • 1/2 cup shredded Parmesan Cheese

Instructions

  1. Preheat oven to 350 degrees. In a food processor, add all ingredients. Pulse to combine, scraping the sides of the bowl to ensure all ingredients are mixed together.
  2. Pour into a baking dish and bake for 25-30 minutes, or until the edges are bubbly and the top is bubbling.  Serve hot with toasted sourdough bread squares.
