I gave up on my scale. Eight pounds to be precise at my last doctor’s check up. And using their scales as a monitor, a couple times a year, is a much better route for me to go so I am not hyper focusing on the number and focusing instead on how I FEEL.

Incorporating a half salad with my daily half sandwich at lunch has been a huge help. I love big, colorful salads that pop with flavor. This mandarin orange cabbage salad with peanut sauce feeds a herd, and I took it for lunch for a whole week. The cabbage is so hearty it lasts and the mandarin oranges infused with the rest of the veggies to give it a sweet kick.

Part of my daily routine is incorporating walking into my day. Since I work on a construction site, it’s hard to get out and find a safe place to walk, but taking that 20 minute break is good for my sanity as much as it is good for my butt. And instead of sitting at my desk all day, I have started building up my standing tolerance with a few hours of standing work, too.

But as much as I champion my half sandwich with half salad, I still have to have my chocolate and portion out one serving into a little cup to eat as my lunch dessert.

Ingredients

SALAD INGREDIENTS:

  • 1/2 head Green Cabbage, Shredded
  • 1/2 head Red Cabbage, Shredded
  • 2 Carrots, shredded
  • 1 Shallot, minced
  • 1 can (8 oz) Mandarin Oranges, reserve juice
  • 2 cups Sugar Snap Peas, snapped in half
  • 1/2 cup Cilantro, minced

DRESSING INGREDIENTS:

  • 2 Tbsp Ginger, minced, or paste
  • 2 Cloves Garlic, minced
  • 1/2 tsp Chili Pepper Flakes
  • 3 Tbsp Lime Juice
  • 1/2 cup Prepared Peanut Sauce, jarred or FRESH
  • 1/2 cup Chow Mein Crunchy Noodles

Instructions

In a large bowl, whisk together all dressing ingredients. On top, add the remaining ingredients (except chow mein noodles) and toss together with the dressing until combined.

Serve and top with crunchy chow mein noodles. Top with additional cilantro for garnish.
