It’s almost the 4th of July!!

FOUR) It’s officially Hot Dog Week 2014! Are you ready? I really hope so, because I have waited for this week, since last year! Hot dog week is my favorite theme week of the year, and I hope it’s yours, too.

Seattle is all a bustle with salmon season in full swing. Yesterday I went down town to our famous Pike Place Market with two of my best girl friends, Beka and Corinne, two of my best girls and bridesmaids from our wedding a couple summers ago. Corinne and I have been best friends since college, and she’s been back in the lower 48 for the last month from Alaska!

And homegirl’s one request was to go to Pike Place Market. How could I argue with that?

Her other request was to go to the Space Needle, but it was so popular you practically couldn’t get a ticket. So we opted for the Great Wheel instead.

Did I mention that I’m afraid of heights? And small spaces? Basically it culminated in me having an epic laugh-panic attach and crying in an orb hanging over Elliot Bay. After the second rotation on the thing I was in a much better place and the tears had subsided. I’m a peach.

But after that, I earned my Beecher’s mac and cheese and a walk through the market. And with salmon season in full swing, smoked salmon is E-V-E-R-Y where!! And if you can get your mitts on some good smoked salmon, make sure you toss it on a hot dog! It will be life changing.

And don’t forget the cream cheese. I promise, this will be the one condiment that will make a permanent appearance on every hot dog for the rest of your days. Game Changer.

Description

This hot dog, topped with smoked salmon, cucumber, and cream cheese will put you in the summer mood, and help you celebrate the sunny months like a real Seattleite.


Ingredients

Scale
  • 4 All Beef Hot Dogs
  • 4 Hot Dog Buns, toasted
  • 4 ounces Salmon Salmon, flaked
  • 1/2 Cucumber, minced
  • 4 ounces Cream Cheese, cut into cubes
  • 1 Shallot (or red onion) thinly sliced or minced
  • 1/4 cup Cilantro, minced

Instructions

  1. Preheat grill to medium high heat. Cook hot dogs until grilled thoroughly.
  2. While the hot dogs are on the grill, prepare all ingredients.
  3. Toast the hot dog buns until golden brown. Top grilled hot dogs with flaked smoked salmon, shallots, cilantro, cucumber and cream cheese. Devour immediately.
