Margherita Quesadilla

This Margherita Quesadilla is packed with melted mozzarella cheese, and loaded with fresh organic baby heirloom tomatoes and fresh basil – just like the classic Italian Margherita pizza!

Margherita Quessadilla - The most cheesy, and fresh quesadilla you've ever had! Traveling is one of my favorite things to do. I’ve been doing a lot of it the last couple of years and exploring new places always gives me new stories to tell and new photos to share. But most of all, traveling also makes me crave home. I’m a home body and being home with Ben and Huck is always my most favorite place to be. Saturday mornings are my favorite time of week, and when I travel over the weekends, I always miss waking up and watching the news, and then watching episodes of This Old House at lunch. We are fuddy duddies.  I made us this quesadilla a couple of weeks ago, and I had to share it with you today, since I am back home with my two favorite boys after being away for five days in Florida.

Five days away from home is a long time. The good thing was that I was with a group of some of the best girls I’ve ever known, and girls that love adventure and having fun just as much as I do. And being in Florida, for some of the more land locked among us, was too much fun to pass up. Sure, we made our conference sessions (or at least a few of them), but when the sun was out, we headed to the beach!

But when I came home to a happy Huck, and a loving husband, the fun and the sunburns I got paled in comparrison to the wagging tails and big hugs.

And ya know, I kind of missed my morning coffee and episodes of This Old House in my yoga pants. Don’t worry, I plan on catching up on it all soon. I feel a TOH binge coming on!

    I love this idea Megan! 2 of my favorite things in life, pizza and quesadillas. So glad you had a fun trip. We are the same way, love to get away sometimes, but nothing beats home, and our loved ones, and our routine:)
