These cranberry white chocolate pistachio cookies are a perfect red,white and green trimmed cookie, perfect for the holidays, or anytime! Sweet, salty and chocolatey, oh my.

*Raise your hand if you’re sick of cookie season!* Good, I don’t see any hands raised. Whew. I was worried there for a hot second. We’re rolling in a steady stream of baked awesomeness this season and I for one am not done yet. I waited all year for this, and like a bad rap song, we’re gonna make it rain cookies, y’all!

Wow, sorry a lot happened there. The coffee obviously hasn’t kicked in yet. Or it’s in over drive and I’m just saying thing… lucky you, dear reader.

I love Washington State. We have it all. I know, every state is awesome in their own right – but between our salty western Washington air, the gentle swish and wave of  Puget Sound and our rolling wheat fields of the Palouse – where my heart and home really is – I am enamored with our state. I’ve lived all over, seen the apple orchards of central Washington, the rolling wheat of eastern Washington, and the cranberry boggs of our coast line. It’s part of who I am and part of my daily routine.

And at this time of the year – cookies are a part of my daily routine. The guys at work absolutely love me right now – they’ve got a stead stream of baked goods constantly rotating through the office and job trailer. And that’s fine by me, because if they are kept at the apartment with Ben and I, there is no amount of gym time that will compensate.

It’s a fine balance – OD on cookies and still get up and do a make-my-legs-feel-like-jelly barre workout after work. Life’s hard. But it sure is made better by cookies!

Ingredients for Cranberry White Chocolate Pistachio Cookies

  • All Purpose Flour
  • Baking Soda
  • Salt
  • Butter
  • Brown Sugar
  • White Sugar
  • Eggs
  • Vanilla Extract
  • White Chocolate Chips
  • Pistachios
  • Dried Cranberries

Cranberry White Chocolate Pistachio Cookies

Description

These cranberry white chocolate pistachio cookies are a perfect red, white and green trimmed cookie, perfect for the holidays, or anytime! Sweet, salty and chocolatey, oh my.


Ingredients

Units Scale
  • 2 1/4 cup of All Purpose Flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup (2 sticks) room temperature butter – use the salted sweet cream butter
  • 1 cup brown sugar packed
  • 1/2 cup white sugar
  • 2 whole eggs
  • 1 Tbsp Vanilla extract
  • 1 cup White Chocolate Chips
  • 1/2 cup Pistachios, just the meat of the nut
  • 1/2 cup Dried Cranberries

Instructions

  1. Preheat oven to 300 degrees.
  2. In a medium bowl, whisk together flour, baking soda and salt. Set aside.
  3. In a stand mixer, or large bowl with electric mixer, mix sugars until thoroughly combined. Mix in butter until thoroughly combined, scarping sides occasionally.
  4. Beat in eggs, again scraping down sides occasionally so thoroughly combined.
    Beat in vanilla.
  5. Slowly add in flour mixture ½ cup at a time. When combined, add in white chocolate chips, dried cranberries and pistachios.
  6. Bake on a pizza sheet or cookie pan for 21 minutes, or until golden brown. Remove from cookie sheet after allowing the cookies to rest for one minute on the baking sheet. Transfer to a cooling rack to complete cooling.
  7. Serve with glass of warm milk, just like mama used to.
