What is the worst feeling first thing in the morning? Besides the alarm…obviously. I’m going with freshly washed jeans. The shimmying and shaking, bouncing and hoisting is just so unpleasant before your first cup of coffee. Well, really it’s not pleasant anytime. So what do I do to make myself feel better? You guessed it – devour a cookie. I’m the queen of food logic. Never mind that I have been training for my 5k program and it is totally counter productive to devour cookies – but I figure I burned off some 400 calories in that hour of sweating and dying to warrant a cookie. Logic strikes again!!

And you have totally earned a cookie when you hiked around Jenny Lake in the pouring down rain in Jackson Hole. These cookies are a copycat of the Trail Mix cookies that the fantastic chefs at Four Seasons Jackson Hole packed for us when we were there for our Anniversaredo a couple of weeks ago. It is chock full of oats, white chocolate, dried cranberries, dried blueberries and that warm and healthy cookie feeling.

These cookies can be made Gluten Free in a couple of easy substitutions!!

Swap out the flour to a GF Flour, and the oats to a GF Oats or granola. Or if you want to up the health factor – substitute half of the white flour with white whole wheat flour.

I just imagine this as a cover to an exclusive Time headline, “I did NOT eat all those cookies off the counter”. Very Clinton-esque, minus the creepy and add the adorable.

But back to cookies – I think these are coming in second to my famed chocolate chip cookies. You can’t mess with a classic – but there is always room for new ones in the cookie making rotation.

Ingredients

2 cups Flour
3/4 tsp Baking Soda
1/2 tsp Salt
1 cup Brown Sugar
1/2 cup Sugar
10 Tbsp Butter, cubed
2 Eggs
1 Tbsp Vanilla
1 cup Oats
1 cup White Chocolate Chips
1/2 cup chopped Pecans
1/2 cup Dried Cranberries
1/4 cup Dried Blueberries


Instructions

Preheat oven to 350 degrees. Place oven racks on middle top and middle bottom racks. Line two baking sheets with parchment or silicone liners.
In a medium bowl whisk together flour, baking soda, salt and oats. Set aside. In a stand mixer combine brown and white sugars. On medium low speed, add in butter and beat it until light and fluffy. Add eggs one at a time, mixing for 30 seconds in between. Add in vanilla extract. Slowly add in flour/oats mixture until just combined. Add in white chocolate chips, pecans and dried berries. Mix until just incorporated.
Place in fridge to chill for 20 minutes.
Scoop out ¼ cup of dough and roll into a ball. Lightly press into the cookie sheet until 1″ thick. Add about 8 cookies per sheet. Place cookies in oven and bake about 10 minutes. Rotate and switch cookie sheets onto opposite oven racks and bake an additional 10 minutes or until golden brown. Remove from oven and allow to cool on wire rack until cool.
