What do you do with two three pound tubs of cream cheese? No, really? What? Cause, I’m hyper focused on cheesecakes. Yes, I really do have that much cream cheese in my fridge. Costco and I are totally besties for life. But there is a reason behind it, I swear it’s legit. I’m not using it for a face mask or unseemly. I have been in wedding cake mode this summer, and somehow both brides nabbed cream cheese frosting as their keystone frosting choice. It’s summer – cream cheese frosting has not been my friend. But you wanna know what I have just found is my friend? These individual Oreo No Bake Cheesecake!!

Ingredients for Individual Oreo No Bake Cheesecake

Cookie Base:

  • Oreo sandwich cookies
  • Melted Butter

Filling:

  • Heavy Whipping Cream
  • Softened Cream Cheese
  • Vanilla Extract
  • Sugar
  • Lemon Juice
  • Mini Chocolate Chips, Cherry Pie Filling, or Additional Oreos for garnish

The only problem with this is that I didn’t have a batch of Oreos to go with it. Ohhhh durn, had to go stock up. After five minutes straight staring at the cookie aisle – have you seen the different Oreos they’re out with now? I mean Coconut Fudge, come to mama. Peppermint, hello! Cake Batter in chocolate and vanilla cookie each almost fell into my basket and Peanut Butter and me are totally home skillets. Yes, I do infact subscribe to the Pre-teen Lindsay Lohan Parent Trap Oreo Trick of dipping my Oreos in peanut butter. Or Nutella. But ya know, whatever. Don’t be a hero and do it.

Lauren gave me a copy to review for free – and with that five pounds of cream cheese in my fridge, it was obvious that her No-Bake Cheesecakes needed to be actioned. And let me tell you son. Sorry, I don’t have any sons. Except for a dog. But let me tell you – these are  insanely easy and even more sinfully delicious. These are going in my back pocket for quick desserts when people come over. It took all of 15 minutes to make. Dinner party, picnic, party, or well because… duh. Description

Keep these in your back pocket for a quick dessert when you have guests over. They’ll be ready in just 15 minutes!


Ingredients

Units Scale

Cookie Base:

  • 8 Oreo sandwich cookies
  • 2 tablespoons melted butter

Filling:

  • 1 cup heavy whipping cream
  • 8 oz. softened cream cheese
  • 1 teaspoon vanilla extract
  • 4 tablespoons sugar
  • 1 teaspoon lemon juice
  • mini chocolate chips, cherry pie filling, or additional Oreos for garnish

Instructions

  1. Crush Oreo cookies in a blender or food processor to create crumbs. Stir with melted butter and divide between 4 serving dishes. Set aside.
  2. In a large mixing bowl, whip cream until stiff peaks form. Set aside.
  3. In another large bowl, mix cream cheese, vanilla, sugar and lemon juice until smooth. Fold in whipped cream.
  4. Spoon evenly between 4 serving dishes and refrigerate until ready to serve.
  5. Top with chocolate chips or cherry pie filling and serve.
