A heat wave is coming! A heat wave is coming! Have you guys seen the new Fiat commercial when the somehow years younger “Paul Revere”-esque twenty something yells out the trade mark phrase, “The British are coming!”.Well in the case of us here in the great PNW, it’s the heat, not the British that are upon us and it shows no signs of slowing. Devouring frozen things on a stick seems like a pretty reasonable way to beat the heat, doesn’t it? You can’t have summer without ice cream, it is fact. The two are synonymous with one another. But what’s not usually synonymous with copious amounts of ice cream is looking good in a bikini, or in my case, a bridesmaids dress next weekend! *Cue panic* Can we catch a break? Please. Finally, dare I say, we might have? *GASP!*
For the next week, I’m baking cakes, whipping up custards, making batch upon batch of cream cheese frosting – all in the name of friendship – but I can already feel a detox coming on. But the end of an epic baking weekend, I can feel and smell the sugar coming out of my pores. HALP! But even if I’m burned out on cakes and frostings, I can’t turn away from ice cream. Can’t possibly. I just need a healthier and less guilty version. Who doesn’t?
These sweet cream and raspberry pudding pops are sugar free, gluten free, high in protein and fiber and they still taste ring in at only 75 calories. Let me say it again – 75 calories. Adding a couple scoops of Sweet Cream Vi-shape shake mix to the sugar free pudding, really amped up the lean protein content, and the added fiber makes these satisfying to your sweet tooth and help keep your case of the hungries at bay.

Sweet Cream and Raspberry Pudding Pops
Yield: 5 Pudding Pops
Prep Time: 10 Minutes
Cook Time: 10 Minutes
Total Time: 20 Minutes + 3 Hours Chill Time
Sugar Free, High in Protein and only 75 Calories!
1 - 3.4 oz package Jello Sugar Free White Chocolate Pudding Mix
2 scoops Visalus Vi-Shape Shake Mix
1 ½ cup Fat Free Milk
1 cup Raspberries
½ tsp Corn Starch
1 popsicle maker
In a small food processor, pulse berries until they have pureed. Pour berries from food processor into a fine mesh strainer resting over a bowl, and using a spatula press the puree through the strainer to remove the seeds. Discard seeds. Into the berry juice, whisk in corn starch. Transfer to a small saucepan and bring to a simmer over medium heat. Stir frequently and allow to thicken slightly. Remove from stove and place into fridge to cool for 20 minutes.
In a medium bowl, whisk together sugar free pudding mix, Vi-Shape shake mix and fat free milk. Let set for five minutes.
In popsicle maker layer pudding and raspberry puree into the molds. For swirled design, use a skewer to dip into the molds and gently stir to distribute mixes. Place popsicle stick into the pops mold. Freeze for 3 hours, or over night. To remove pudding pops from the molds, run the molds under warm water for a few seconds to dislodge. Devour immediately, or wrap in plastic wrap and keep in freezer until ready to eat.
