Sometimes during the weeknight rush finding something inspired is a hard thing to do. You’re busy with work, errands, pets, baseball games, phone calls and e-mails that never end. But when the guesswork is taken out of dinnertime, it makes the days go so much easier. When Bumble Bee SuperFresh™ contacted me and asked me to test out their new line of Bumble Bee SuperFresh™ suppers, I jumped at the chance. I’m no stranger to the daily grind, and coming home to find perfectly portioned entrees ready to go made dinner a cinch. Pre-seasoned with all natural and wholesome ingredients you can actually pronounce made them even more enticing. Ben and I first dined on the Spicy Shrimp Romesco, devouring it over a side of spaghetti noodles. There was no guesswork involved, or additional ingredients needed – it was pure perfection right out of the skillet! In six minutes we had shrimp dripping in a rich tomato butter sauce with shallots, garlic, parsley and more. Nothing added, nothing changed – that’s how it came right out of the package!

As a salmon fanatic from Seattle I decided our next foray was into the Salmon with Garden Pesto. Included in our packet were parchment bags to bake them in, which made our clean up a breeze. Just like the Spicy Shrimp Romesco with its natural and simple ingredients, the Salmon with Garden Pesto was topped with its own ingredients, including vibrant green pesto, almonds and olive oil. It doesn’t get any simpler than that. And simple is good. You don’t want to cover up the flavors of a good salmon! The pesto on top was just what it needed to go from fine to sublime. It came out of the parchment perfectly cooked and best of all – flaky. Over done salmon doesn’t bode well for this seafood fan. Bumble Bee SuperFresh™ really knows a good fish recipe when they have it.

The “hardest” part of creating this dish was deciding what I’d fix alongside it! If that’s the hardest part about this, it was a really easy dinner night. With nutritious seafood I decided an equally healthy side dish was mandatory, going for a quick whipped sweet potato with Greek yogurt and chives. The sweet balanced out the vibrancy of the pesto and the flavors of the salmon, melding it all together. Ben relished the meal and he even volunteered to do the dishes – of which there was one baking pan to wash! I should have known…  But that’s okay, it meant I got to sit back and enjoy my glass of Pinot Gris that went with our meal. Light just like the fish, it was what this busy blogger needed.

Ingredients for Whipped Sweet Potatoes with Greek Yogurt and Chives

  • Sweet Potato
  • Plain Greek Yogurt
  • Butter
  • Fresh Chives
  • Garlic
  • Cayenne Pepper
  • Salt and Pepper

Whipped Sweet Potatoes with Greek Yogurt and Chives

Description

These whipped sweet potatoes are a quick and nutritious side dish. The sweetness is a great compliment to a savory main dish!


Ingredients

Units Scale
  • 1 Large Sweet Potato, peeled and cubed
  • 1/3 cup Plain Greek Yogurt
  • 2 Tbsp Butter, softened
  • 1 1/2 tsp Fresh Chives
  • 1 tsp Garlic, minced
  • 1/8 tsp Cayenne Pepper
  • Salt and Pepper to Taste

Instructions

  1. Bring potatoes to a simmer in a medium saucepan. Simmer until fork tender, about 10 minutes. Drain thoroughly.
  2. Place back into sauce pan, using a masher or heavy-duty whisk, beat in Greek Yogurt and butter.
  3. Add in half of the chives, garlic, peppers and salt. Beat until light and fluffy in texture.
  4. Serve, topped with remaining chives for garnish.
