I’m so very fortunate to live near Heather and have had the chance to get to know her through her gorgeous site and in person. She lights up whatever room she steps into, her genuine personality just radiates and oh my gosh, I can’t get over her laugh. Watch her book trailer! See what I mean? It just makes you smile.

A couple of months ago Heather, Beka, another girl friend and I had brilliant plans to go wine tasting through my little wine town which turned into us wine drinking and eating at one restaurant for hours, why lie here this is a safe space – and amongst the laughs, the chatter of child rearing, travel plans and husbands with hair brained ideas, and duh FOOD, we listened to Heather talk about this dip and it’s all to true addictive properties. Naturally, it just catapulted it to the top of my list of things to try as soon as I got my mitts on her book. It’s as old world as it gets, right from the yayas to Heather, to you.

She totally mastered this gorgeous dip. She even suggested using it as a sandwich spread – which is totally inspired. I am totally all for the eat-it-with-the-spoon approach, but I’ll be civilized.

Heather’s kopanisti is loaded with feta, roasted red peppers, mint (Mind. Blown.), garlic, pepper and zesty lemon. Yeah, seee – now you know why I’m out of things to dip into this?

Ingredients for Kopanisti Dip

  • Feta
  • Roasted Red Peppers
  • Fresh Mint Leaves
  • Olive Oil
  • Garlic
  • Fresh Lemon Juice
  • Red Pepper Flakes

Oh…There might have also been a slight issue with my indecisiveness because I also had to make her Meltaway Cookies, too. Don’t judge me. I justā€¦just.. couldn’t not make them. LOOK AT ‘EM!!

So don’t mind me – but I have some dip to go devour and Ben just ate the very last of the Meltaway cookies, so I’m fresh out. I made him eat the remaining two so I didn’t feel so guilty about eating the entire batch myself. Glutton. ItĀ was a tense and honest moment with myself. I had to step away, they were too good.

Ingredients

Scale

12 ounces Feta, drained and cubed
4 ounces, Roasted Red Peppers, drained
1 cup Fresh Mint Leaves
1/4 cup Olive Oil
3 cloves Garlic, peeled
2 Tbsp Fresh Lemon Juice
1/4 tsp Red Pepper Flakes


Instructions

In the bowl of a food processor, puree all of the ingredients until smooth and well combined, but still with some texture. Serve immediately or refrigerate for up to 5 days until ready to use.
