Is it really Friday? Really?  Well in that case – I have cookies for you. We’ve made it through another week which means we’ve earned it. How does a thick, chewy brown butter white chocolate macadamia cookie with roasty toasty coconut sound? It’s practically a vacation wrapped in butter! Brown butter to be specific.

I can’t be the only one who is over the cold and ready for winter to be over. You, too? I knew we could be friends. To help get through the gray of Seattle, I’ve been spending far too much time pursuing Costco Travel searching out vacation deals although I have no intention of going on any of them. Hawai’i has been top of my list, mostly because Ben has never been there before. I’m rather partial to Maui myself… so I’ll dream of visiting the beach, getting a tan, and having a little umbrella drink in my hand 24/7.

Brown Butter White Chocolate Macadamia Cookies with Coconut 3But then that also means I would have to cut out the cookies, danishes, all manner of sweets to make sure other beach combers don’t get freaked out over the beached whale on the beach towel next to them and call for a marine rescue crew to throw me back into the sea.

So, on second thought – maybe I’ll skip the vacation to Hawai’i because cookies with brown butter and tastes of the tropics just sound so dang GOOD!! Oh wait – they ARE that dang good!

And it’s really easy to do at home. I keep a stash of brown butter in the fridge for those times when I need it immeidately. Have you ever tried making your own brown butter? Yield: 24

Prep Time: 20 Minutes

Cook Time: 22 Minutes

Total Time: 45 Minutes

Ingredients:

2 cups Flour
1 tsp Baking Soda
1 cup Brown Sugar
½ cup Sugar
1 cup Browned Butter
2 Eggs
1 cup White Chocolate Chips
¾ cup Macadamia Nuts, roughly chopped
⅔ cup Toasted Coconut

Directions:

Preheat oven to 300 degrees. In bowl, whisk together flour and baking soda. Set aside. In stand mixer beat together sugar and brown sugar until combined. Beat in brown butter. Mix until sugars and butter have creamed together and become light colored. Add in one egg at a time, beating 30 seconds in between. Slowly add in flour/baking soda mix until just combined.
Add in white chocolate chips, chopped macadamia and toasted coconut. Mix until just combined.

Scoop out and place on cookie sheet 2-3 inches apart. Bake for 21-22 minutes or until golden brown. Remove and place on cookie rack to cool. Devour.

    The White Chocolate Macadamia cookie was always my favorite since I was a little girl, and the texture of these cookies…amazing! Brown butter is genius too. I grew up in California and lived there most of my life…but can you believe I never went to Hawaii? I’ve been to 23 countries around the world, but lived in one of the closest states to Hawaii and have never been. As you can see, this pains me haha.

    On the off chance that those cookies fell into the milk, I would say that’d be grounds for making a cookie milkshake…just a dollop of ice cream and a blender would take care of that “problem” ;) You’re so good with brown butter, I neeeeeeed to do this!

    You know I LOVE these. I have been aching for a Hawaii vacation lately too. So I will crank up the heat this weekend, turn on some Hawaiian tunes, make a mai tai and bake these cookies. And not even think about wearing a bikini. ha ha

    Megan, you are officially killing me. With the buffalo sliders yesterday and these amazing cookies today, I am going to weigh 458763 pounds when the weekend is over. Coconut is my weakness, and white choc macadamia cookies are one of my underrated faves. When combined, I’m pretty positive they have super powers or something.

    I made Coconut Oil White Chocolate Cookies this week! And your cookies remind me of a cookie I made about 3 yrs ago that is my FAVE cookie on my entire blog (minus the nuts – didnt use them). They are stunning, Megan! I love all the flavors and white chocolate + coconut can do no wrong. Pinning!

    I just made these with a few changes and they were amazing!

    First of all, I only made half the recipe otherwise my bf and I’d eat them all… lol

    So this is what I did differently:

    I replaced the 1 cup of flour with 1/2 cup of wheat flour, 1/4 cup of oat flour, and 1/4 cup of rolled oats.

    I replaced the 1/2 cup of sugar with 1/4 cup of demerara sugar/stevia combination.

    I used less than half a cup of browned butter.

    They were so delicious!

    Even with half the recipe, I still got 19 big cookies out of the batch! I called in his cousin for backup and he ate like 5 of them. We all loved them! Thank you for sharing! :)
