This Fluffernutter Ice Cream will have you harking back to your childhood WonderBread days with peanut butter and marshmallow cream tucked inside!! Amazing! Fluffernutter: (noun) Combination of peanut butter and fluffy marshmallow creme, traditionally sammiched between slices of plain ol’ Wonderbread, perfect for elementary school children rendering them sugar highed and tweaky. Or brides regressing to childhood cravings in times of panic and stress.

Use in a sentence: With all of this stress and frazzlement Megan is going through with her wedding planning, she is regressing to childhood cravings of Fluffernutter treats as a coping mechanism for her stress.

Isn’t the point of to-do lists to catergorize your life and then find a way to strike a pen through that list with self gratification and a sense of accomplishment? Normally, perhaps. But with a wedding looming in 26 days, the list is doing the opposite of shrinking. In fact its going exponentially in the other direction. *palmface*

And about yesterday, in anticipation of receiving this list, I started taking small backhoe sized bites out of the ice cream tin just out of sheer panic and foresight.

The list of things to do goes something like this…

That also doesn’t include the four hours of wedding music that we have to put together for the entire event (Sidebar: If you have suggestions of wedding songs – Please, feel free to leave them in the comments section.).

And the two dress fittings.

And packing for the honeymoon.

And finalizing the flowers, the cupcakes, the delivery of chairs, menu for the dinner.

It’s not a pretty sight.

This on the other hand is a very pretty sight.

After a brief e-mail with my photographer there might be something very special happening during our wedding day photos that we didn’t expect that will take away a great deal of stress and make me furiously happy. It’s something almost as cool as me marrying my best friend (awww, barf.) By best friend, I don’t mean Beka. Although she is my best friend – but my man best friend, Ben.

It has to do with this. Cryptic, I know. This wedding has been full of cryptic and confidential information. Some of which has really pissed off the old folks – and its boarding on fun. Why lie? All this stress, a girl needs an outlet. And after all the yammering and talking we’ve done about this wedding to any number of sources- its been almost a weight lifted off of us to keep something to ourselves. Like that bag of chips you have above the fridge that you sneak snacks out of when you need a fix and that last straw of stress lifted off your shoulders…not that anyone needs to know. Except you and your tightening jeans.

Ingredients For Fluffernutter Ice Cream and Peanut Butter Magic Shell

Ice Cream:

  • Whole Milk
  • Heavy Cream
  • Peanut Butter
  • Sugar
  • Vanilla
  • Egg yolks
  • Marshmallow Creme

Peanut Butter Magic Shell:

  • Peanut Butter
  • Coconut Oil

The point is – wedding planning angst is now causing me to regress to childhood cravings of peanut butter and marshmallows and if someone doesn’t remove the spoon from my hand shortly problems will be had by me and my wedding dress. You may or may not get your hand back after trying to remove said eating utensil – but thats a risk you must be willing to take. I will not give up this ice cream lightly – because it is the things tweaky stressing girls dreams are made of.

Like, for realsies. Yeah, I just said that. You can unfriend me now. Or after you make this ice cream and I’ll prove my point.

In the meantime – what wedding song selections would you want to hear at a wedding? Any song goes, people. We already have a request for My Humps by the BEP’s… thats how we roll.

Fluffernutter Ice Cream and Peanut Butter Magic Shell

Description

Peanut butter ice cream with marshmallow creme swirl.


Ingredients

Units Scale

Ice Cream:

  • 1 pint Whole Milk
  • 1 pint Heavy Cream
  • 1 1/3 cup Peanut Butter
  • 1 cup Sugar
  • 1 Tbsp Vanilla
  • 5 Egg yolks
  • 1 1/2 cup Marshmallow Creme

Peanut Butter Magic Shell:

  • 1/3 cup Peanut Butter, smooth
  • 3 Tbsp Coconut Oil, melted

Instructions

For Ice Cream:

  1. In medium saucepan, heat milk and heavy cream until it just bubbles.
  2. Whisk eggs in large bowl along with the sugar, and then add the hot milk mixture in a slow stream running to temper the egg and sugar mixture.
  3. Pour everything back into saucepan and cook over medium heat, whisking in 1 1/3 cup of peanut butter until it becomes smooth and thickened.
  4. Pour custard through a fine-mesh sieve into a large bowl. Cover bowl with plastic wrap and place in fridge to chill for at least two hours.
  5. Freeze custard in ice cream maker according to manufacturer’s instructions. About 20 minutes according to some manufacturer’s instructions.
  6. In the last 30 seconds of mixing, mix in the marshmallow creme and allow to swirl into peanut butter ice cream.
  7. Scrape ice cream into freezer safe container and press plastic wrap to the surface of the ice cream. Seal container and freeze until solidified. Freeze about two hours. Serve when frozen through.

For Peanut Butter Magic Shell Topping:

  1. Microwave coconut oil until just melted. Add in peanut butter and whisk together until both are combined evenly.
  2. Drizzle over ice cream and devour.
